Turkey Club Campfire Sandwiches

Today was Prom day in our city, and in our home.  It was our Senior’s first and last prom.  We knew we’d be busy all day, especially with shooting photos.  So sandwiches were a no brainer.  These were hands down my favorite and were utterly delicious!   If camping, you can prepare these sandwiches before you leave and then just throw them on your Grill Plate to heat & eat.  Our recipe makes 4 sandwiches, so double or triple, etc. for the size of your crowd.  We love these for lunch or a quick & easy dinner. Keilbasa Kabobs

Hello folks!  Back with another kabob recipe.  If you can even actually call it that.  Don’t let the simplicity of this recipe fool you though, it’s still full of flavor and perfect for those “I’m too tired to think let alone cook” night! We’re back with another foil packet meal!  We’ve taken Cod fillets, coated them with melted butter, seasoned and sprinkled with dill, and topped with fresh lemon slices.  Served over savory rice, this meal hits the spot when you are looking for something light & fresh, yet flavorful. Campfire Country Goulash

It’s fall and that means it’s time for comfort food.  There is little more comforting when the weather cools down than hearty soups and stews.  Goulash or Beef Tomato Macaroni Soup is a classic.  Most everyone may have their own recipe, but we hope you will give ours a try.  Our recipe has evolved over the years and ended up with this version being the “keeper”  Especially on our Pappy’s Campfire Cooker.  Wood-fired Goulash is on a whole other level!!  This recipe makes a very large pot, but even that didn’t last long around here, it was devoured! Savory Pork Loin Chops

The savory marinade used on these pork loin chops are a staple in our home.  We use it on all cuts of meat and even vegetables.  We prefer to buy a full pork loin and have the butcher cut it to roughly 3/4″ – it makes for the juiciest chop! Before we started grilling these delicious chops on Pappy’s Campfire Cooker, we started the green beans on the kettle hook so they could cook slow while the chops marinated.  Seriously, wood-fired green beans will spoil you!  We made our mashed potatoes inside, which made this a perfect Autumn meal.
